He joined Santiburi in 2017 as a Demi Chef de Partie. His command of traditional Thai flavours, commitment to sustainable practices and natural leadership saw him progress through the kitchen and ultimately take responsibility for Sala Thai’s culinary direction.

Today, Chef Pop oversees menu creation, ingredient procurement, cost control and team training. He considers not only authenticity and presentation, but also seasonality and nutritional balance.
